Last weekend (8/29) Chris and I cooked this whole hog for my sister's engagement party at my Dad's shop in Nebraska. We had a blast and cooked a pretty good pig when it was all said and done. We served well over 100 people with a 135lb hog that took just about 14 hours to finish.
Established in the summer of 2005, the Dodge County Smokers BBQ team is made of Neal Dunker and Chris Nickelson. We became neighbors by chance in Mission, KS when we moved into houses that had backyards facing each other. Since that time we have both moved again, but the BBQ team we formed remains. This blog was created to document our 2008 BBQ season. It will be an exciting year and we'll be participating in a a few new events. We have qualified for some highly reguarded invitation-only contests and we'll do our best to include all the dirty details as we document our adventures in BBQ!
